Stir-fried minced turkey is served with tender crunchy beans and on top of cos lettuce leaves

Ingredients

Lime juice

¼ cup(s), (60ml)

Soy sauce

1 tbs

Fish sauce

1 tbs

Brown sugar

2 tsp

Green shallot(s)

4 individual, thinly sliced

Skinless turkey breast

500 g, minced

Sesame oil

2 tsp

Fresh lemongrass

2 tsp, chopped

Green string beans

200 g, cut into 1cm pieces

Fresh coriander

½ cup(s), leaves

Cos lettuce

2 cup(s), leaves separated

Fresh mint

¼ cup(s), small leaves

Cherry tomatoes

250 g, quartered

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine the lime juice, soy sauce, fish sauce and sugar in a bowl.
  2. Combine the shallot, mince, oil and lemongrass in a medium bowl.
  3. Lightly spray a wok with oil and heat over high heat. Stir-fry the mince mixture, in 2 batches, for 3-4 minutes or until browned and cooked through. Return the mince mixture to the wok with the beans and soy sauce mixture. Stir-fry over high heat for 1-2 minutes or until beans are just tender. Add coriander.
  4. Fill lettuce leaves with mince mixture, top with mint and serve with tomato.

Notes

SERVING SUGGESTION: Steamed white rice.
