Looking to up your fish intake? These barramundi burgers complete with tartare sauce fit the bill.

Ingredients

Barramundi, raw

500 g, (4x125g skinless fillets)

Light whole egg mayonnaise

100 g, (1/3 cup)

Grapes, cornichon, raw

20 g, (1 tbs) finely chopped

Capers, rinsed, drained

1 tsp, finely chopped

Fresh dill

2 tsp, finely chopped

Lemon juice

2 tsp

Wholemeal bread roll

4 large, (4x60g rolls) halved

Cos lettuce

1 cup(s), (4 leaves)

Carrot(s)

1 large, coarsely grated

Lebanese cucumber

1 small, cut into thin ribbons

Red cabbage

1 cup(s), shredded

Oil spray

2 x 3 second spray(s)

Instructions

  1. Heat a chargrill pan or barbecue over high heat. Lightly spray fish with oil and cook for 2–3 minutes each side or until cooked and golden.
  2. To make tartare sauce, combine mayonnaise, chopped cornichons, capers, dill and juice in a small bowl. Spread cut-side of rolls with tartare sauce. Top 4 roll halves with lettuce, carrot, cucumber, cabbage and barbecued fish. Sandwich with remaining 4 roll halves and serve.

Notes

SERVING SUGGESTION: Mixed green salad.TIP: Use a vegetable peeler to cut cucumber into thin ribbons.
