Hot winter fruit stars in this simple cinnamon-spiced crumble that's ready in less than an hour.

Ingredients

Rhubarb

3 individual, stick, thinly sliced

Green apple, peeled

2 medium, cut into 1cm pieces

Caster sugar

1 tbs

Plain flour

¾ cup(s), (110g)

Brown sugar

2 tbs, firmly packed

Ground cinnamon

½ tsp

Reduced fat oil spread

2 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray four 1-cup (250ml) capacity ovenproof dishes with oil. Combine sliced rhubarb, green apple, caster sugar and 2 tablespoons water in a medium saucepan over medium heat. Cover and cook, stirring occasionally, for 5–7 minutes or until the fruit has softened, then spoon the cooked fruit evenly into prepared dishes.
  2. Combine flour, brown sugar and cinnamon in a large bowl. Using your fingertips, rub in the canola spread until mixture resembles breadcrumbs. Spoon crumble mixture over fruit, then bake for 15–20 minutes or until golden. Serve crumble immediately.

Notes

SERVING SUGGESTION: Enjoy with vanilla ice cream. TIP: You can use mixed frozen berries instead of rhubarb to make this delicious crumble.
