Pork steaks topped with sour cream, mustard and melted cheese.

Ingredients

baby potato

8 small, (40g each)

extra light sour cream

2 tbs

wholegrain mustard

1 tbs

lean pork fillet

400 g, (buy 500g), fat trimmed

Bega Country Light Cheese, 50% Reduced Fat, Tasty Cheddar

50 g

mixed frozen vegetables

750 g

Instructions

  1. Preheat grill on high. Line a baking tray with foil.
  2. Boil, steam or microwave potatoes until just tender. Drain. Cut potatoes in half. Cover to keep warm.
  3. Meanwhile, combine cream and mustard in a small bowl. Place pork on prepared tray and grill for 3 minutes (see tip). Turn pork and grill for 2 minutes. Spread mustard mixture evenly over pork and sprinkle with cheese. Grill for 1 minute or until golden.
  4. Prepare vegetables following packets instructions. Serve pork with potatoes and vegetables

Notes

TIP: Place grill rack about 8cm away from heat for even cooking. You can use any frozen vegetable mix, such as broccoli and cauliflower, or carrot and green beans.
