When a friend drops by for an impromptu lunch, this classic French salad is quick, simple and sure to impress.

Ingredients

Potato, baby new, boiled -

250 g

Green string beans

100 g, trimmed

Capers, rinsed, drained

1 tbs, chopped

Lemon juice

2 tbs

Olive oil

2 tsp

Dijon mustard

1 tsp

Egg(s)

2 medium, soft-boiled, quartered

Red onion

1 small, thinly sliced

Black olives, drained

40 g

Tuna, canned in springwater, drained

175 g, (1x185g can)

Fresh flat-leaf parsley

¼ cup(s)

Instructions

  1. Boil, steam or microwave potatoes and beans, separately, until just tender. Rinse under cold running water. Drain. Cut potatoes into quarters.
  2. Meanwhile, place the capers, juice, oil and mustard in a large bowl and whisk until combined. Add the egg, onion, olives, tuna, parsley, potato and beans and toss gently to combine. Season with salt and freshly ground black pepper. Serve.
