Prawn and coleslaw soft tacos
Give tacos a healthy modern twist with these spice coated prawns. Perfect for a quick summer dinner that all the amigos will love.
Coleslaw mix, without dressing

Raw peeled prawns
600 g, peeled, deveined
Reduced-salt taco seasoning mix
Extra light sour cream
304 g, (8 x 38g)
- Lightly spray a non-stick frying pan with oil and heat over high heat. Combine prawns and spice mix in a bowl and toss to coat. Cook prawns turning, in batches, for 2-3 minutes or until just cooked through.
- Meanwhile, combine sour cream and 1Tbs hot water in a large bowl. Season with salt and pepper. Add coleslaw mix and toss gently to combine.
- Heat tortillas in microwave following packet instructions. Top half of each tortilla with coleslaw mixture and prawns. Serve.
SERVING SUGGESTION: Lime wedges, plus a salsa of diced avocado, Lebanese cucumber, tomato and fresh coriander.
