This pudding is jam packed with berries and we’re certain that this will be everyone’s all-time favourite dessert!

Ingredients

Frozen berries

125 g, mixed

Reduced fat oil spread

30 g

White self-raising flour

½ cup(s), (75g)

Skim milk

¼ cup(s), (60ml)

Orange rind

½ tsp, finely grated

Brown sugar

¼ cup(s), (55g) firmly packed

No added sugar orange juice

¼ cup(s), (60ml)

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray four ¾-cup (185ml) capacity microwave-safe dishes with oil. Divide half the berries among prepared dishes.
  2. Place spread in a medium microwave-safe bowl. Microwave on High for 20 seconds or until melted.
  3. Add flour and milk to melted spread and stir until just combined. Add rind and half the sugar and stir to combine. Fold in remaining berries. Spoon mixture into prepared dishes. Sprinkle with remaining sugar.
  4. Combine juice and ⅓ cup (80ml) boiling water in a jug. Gently pour juice mixture over mixture in dishes (see note). Place dishes on a microwave-safe rack. Microwave on Medium-high (75% power) for 5–6 minutes or until just cooked through. Set aside for 5 minutes before serving.

Notes

SERVING SUGGESTION: Reduced-fat vanilla custard. TIPS: Pour the juice mixture over the back of a metal spoon so it doesn’t create holes in the pudding mixture. VARIATION: Swap berries for diced canned apricots.
