Mushroom, tofu and noodle stir-fry

Japanese-style marinated tofu, mirin and tamari give this stir-fry a Japanese twist.

Ingredients

Marinated tofu

400 g, Japanese-style, cut into 2cm cubes

Sesame oil

1 tbs

Swiss brown mushrooms

150 g, sliced

Mushrooms

100 g, (oyster), sliced

Mushrooms

200 g, (button) , sliced

Garlic

2 clove(s), thinly sliced

Button squash

6 individual, (yellow), sliced

Cooked soba noodles

400 g, (2 x 200g packets)

Soy sauce

2 tbs, (Tamari Japanese soy sauce)

Mirin seasoning

¼ cup(s), (60ml), see tip

Sesame seeds

1 tbs, toasted

Green shallot(s)

2 individual, sliced

Instructions

  1. Heat a wok over high heat. Add 3 teaspoons of oil and heat for 30 seconds. Add the combined mushroom and garlic, and stir-fry, in 2 batches, for 3-4 minutes or until browned. Transfer to a plate.
  2. Heat the remaining oil in wok over high heat. Stir-fry the squash for 2-3 minutes or until tender. Return the mushroom mixture to the wok with the tofu, noodles, mirin and tamari, and stir-fry for 2 minutes or until heated through. Serve topped with sesame seeds and shallot.

Notes

STAR INGREDIENT: Mirin is a sweet, low-alcohol Japanese wine made from rice. Find it in the Asian section of most supermarkets or in specialty Asian grocery stores.
