Ingredients

fresh coriander

¾ cup(s), chopped

fresh flat-leaf parsley

¾ cup(s), chopped

garlic

2 clove(s), crushed

fresh red chilli

1 whole, long, finely chopped

ground cumin

1 tsp, toasted

smoked paprika

½ tsp

lemon juice

olive oil

1 tbs

chickpeas, canned, rinsed, drained

1 can(s), (1x400g can)

cherry tomato

350 g, mixed, chopped

mackerel, canned in brine, drained

230 g, (2x115g can), flaked

fresh lemon rind

2 tsp, grated

Instructions

  1. Combine coriander, parsley, garlic, chilli, cumin, paprika, juice and oil in a large bowl.
  2. Add chickpeas, tomatoes and mackerel and toss to combine. Serve salad sprinkled with zest.

Notes

SERVING SUGGESTION: Light wholemeal pita pockets. Add it: 2 tbs pine nuts (toasted) sprinkled to serve. Swap it: Canned mackerel for canned tuna in springwater.
