These light and fluffy puddings pack a zesty little puch!


Ingredients
Egg(s)
2 medium, separated
Caster sugar
⅔ cup(s), (150g)
Reduced fat oil spread
50 g
Lime rind
2 tsp, finely grated
Fresh lemon rind
2 tsp, finely grated
White self-raising flour
1 cup(s), (150g)
Lemon juice
½ cup(s), (125ml)
Lime juice
¼ cup(s), (60ml)
Skim milk
2 cup(s), (500ml)
Lemon zest
1 tsp, to serve
Oil spray
1 x 3 second spray(s)
Instructions

Preheat oven to 180°C. Lightly spray six 1-cup (250ml) capacity ovenproof dishes with oil. Place in a large baking dish.

Using an electric mixer, whisk the egg yolks, sugar, spread and combined rind in a bowl until light and fluffy. Stir in the flour. Add the combined juice and milk and stir to combine.

Using a clean electric mixer, whisk the egg whites until firm peaks form. Gently fold the egg white through the flour mixture, in 2 batches, until combined. Spoon into prepared dishes. Pour enough boiling water into the baking dish to come halfway up the side of the dishes. Bake for 20 minutes or until a cake-like top forms on the surface. Remove from oven. Set aside for 5 minutes to rest. Sprinkle with the lemon zest to serve.
