Reduced fat oil spread is a great switch for butter and oil.

Ingredients

white bread

60 g, crustless, day-old, torn

reduced fat oil spread

1 tbs

fresh dill

1 tbs, firmly packed

fresh flat-leaf parsley

1 tbs, firmly packed

fresh lemon rind

2 tsp, finely grated

skinless salmon fillet(s)

750 g, (6x125g fillets) boneless

lemon(s)

1 medium, cut into wedges to serve

Instructions

  1. Preheat oven to 200°C. Line an oven tray with baking paper. Process the bread, spread, dill, parsley and lemon rind in a food processor until coarse crumbs form and the mixture is combined.
  2. Arrange salmon fillets on the prepared oven tray. Firmly press breadcrumb mixture on top of each fillet. Bake for 10 minutes or until the salmon is cooked through and the breadcrumb mixture is golden. Serve with lemon wedges.

SERVING SUGGESTION: Roasted cauliflower and broccoli with crispy bacon.
