Ingredients

popcorn, kernels, unpopped

80 g

kale

2 cup(s), (4 handfuls) chopped

fresh lemon rind

2 tsp, finely grated

oil spray

2 x 3 second spray(s)

Instructions

  1. To cook the popcorn, place popcorn kernels in an air popper and cook following manufacturer’s instructions. Alternatively, if you’re using the microwave, place popcorn in a microwave-safe bowl, cover with plate and microwave on high (100%) for 3–4 minutes or until popping subsides. Be sure to lightly spray cooked popcorn with oil before adding flavour to help it stick.
  2. Preheat oven to 160°C. Spread handfuls of chopped kale on a baking tray and lightly spray with oil. Bake for 3-10 minutes or until crisp. Process in a food processor with lemon rind. Sprinkle over popcorn and toss to combine. Serve.
