Honey soy pork and vegetable stir-fry

Ingredients

Sesame oil

2 tsp

Pork fillet or tenderloin, raw

480 g, fat trimmed, thinly sliced (Buy 600g)

Red capsicum

1 large, sliced

Choy sum

1 bunch(es), cut into 5cm lengths

Pak choy

1 baby, halved lengthways

Mushrooms

150 g

Green shallot(s)

4 individual

Snow peas

200 g

Fresh ginger

1 tbs

Cornflour

1 tbs

Oyster sauce

1 tbs

Soy sauce

1 tbs

Honey

1 tbs

Lime(s)

1 medium, sliced

Fresh coriander

50 g, sprigs

Instructions

  1. Heat a wok over high heat. Add half the oil and heat for 20 seconds. Stir-fry half the pork for 2–3 minutes or until browned. Transfer to a plate. Repeat with remaining oil and pork.
  2. Add capsicum, choy sum, pak choy, mushrooms and shallots to wok and stir-fry for 2–3 minutes or until vegetables have softened. Add snow peas and ginger and stir-fry for 2 minutes or until snow peas are just tender.
  3. Meanwhile, combine cornflour and 2 tablespoons water in a bowl. Add oyster sauce, soy sauce and honey and stir to combine. Add honey mixture and pork to wok and stir-fry for 1 minute or until pork has warmed through and sauce has thickened. Serve with lime cheeks and coriander.

Notes

SERVING SUGGESTION: Brown rice. TIPS: Mixed Asian mushrooms are found in the fresh produce section of most supermarkets. If unavailable, use button mushrooms. Add it: 2 long fresh red chillies (thinly sliced) with ginger in Step 2. Swap it: Snow peas for snake beans (cut into 5cm lengths).
