Ingredients

Wholemeal pita bread

31 g

Low-fat ricotta cheese

1 tbs

Soft goat's cheese

20 g

Tomato(es)

60 g, medley, sliced

Sunflower seeds

1 tsp, toasted

Pumpkin seeds (pepitas)

1 tsp, pepitas, toasted

Fresh basil

1 tbs

Basil pesto

1 tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat a chargrill or barbecue over high heat. Lightly spray pita bread with oil. Cook for 2–3 minutes each side or until golden and crisp.
  2. Meanwhile, combine ricotta and goat’s cheese in a small bowl until smooth. Spread ricotta mixture over pita. Top with tomato, sunflower seeds, pepitas and basil leaves. Top with basil pesto to serve.

Notes

TIP: To toast sunflower seeds and pepitas, toss them in a small non-stick frying pan over medium heat until golden.
