Mix crunchy croutons, juicy cos lettuce and salty prosciutto for an easy tasty salad.

Shaved parmesan cheese

4 medium, (soft yolk centre)
- Preheat grill to high. Lightly spray bread with oil. Grill bread for 1–2 minutes each side or until toasted. Cut into 1cm squares.
- Grill prosciutto for 2 minutes each side or until crisp. Coarsely chop.
- Whisk dressing and juice in a small bowl. Place croutons, prosciutto, parmesan and lettuce in a large bowl. Add dressing and toss to combine.
- Divide salad among serving plates. Serve topped with egg and seasoned with salt and freshly ground black pepper.
To soft-boil eggs, place room-temperature eggs in a small saucepan and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook for 3–4 minutes.
