Mix crunchy croutons, juicy cos lettuce and salty prosciutto for an easy tasty salad.


Oil spray

Wholemeal bread

3 slice(s)

Prosciutto fat trimmed

100 g

Fat-free dressing

2 tbs, Caesar variety

Lemon juice

1 tbs

Shaved parmesan cheese

30 g

Cos lettuce

2 baby, (2 bunches)

Boiled egg(s)

4 medium, (soft yolk centre)


  1. Preheat grill to high. Lightly spray bread with oil. Grill bread for 1–2 minutes each side or until toasted. Cut into 1cm squares.
  2. Grill prosciutto for 2 minutes each side or until crisp. Coarsely chop.
  3. Whisk dressing and juice in a small bowl. Place croutons, prosciutto, parmesan and lettuce in a large bowl. Add dressing and toss to combine.
  4. Divide salad among serving plates. Serve topped with egg and seasoned with salt and freshly ground black pepper.


To soft-boil eggs, place room-temperature eggs in a small saucepan and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook for 3–4 minutes.
