For Italians, minestrone means ‘big soup’ because it’s full of vegetables, beans and pasta. Buon appetito!

Ingredients

brown onion

1 large, finely chopped

garlic

2 clove(s), crushed

carrot(s)

2 large, cut into 1cm pieces

celery

3 individual, thinly sliced

swede

½ medium, cut into 1cm pieces

vegetable stock cube

3 individual, to make 1.5L (6 cups) liquid stock

canned borlotti beans, rinsed, drained

1 can(s), 400g size can, (1 x 400g can)

canned diced tomatoes

1 can(s), (1 x 400g can)

tomato paste

1 tsp

dried herbs

3 tsp, mixed Italian variety

dry wholemeal pasta

50 g, spaghetti, broken into short lengths

green beans

100 g, sliced

fresh basil

1 tbs, leaves, to serve

Instructions

  1. Place onion, garlic, carrot, celery, swede, stock, beans, tomatoes, tomato paste and dried herbs in a large saucepan over high heat. Bring to the boil. Reduce heat and simmer, stirring occasionally, for 20-25 minutes or until vegies are tender.
  2. Add spaghetti and green beans. Cook for 8-10 minutes or until pasta is tender. Season with salt and pepper. Serve with basil.

Notes

TIPS: Store leftovers in an airtight container in the fridge for up to 2 days, or freeze for up to 2 months. Reheat in the microwave or in a saucepan on the stove top, adding a little water if too thick. Swap borlotti beans for cannellini beans.
