Add an amazing new flavour dimension to meat, chicken or fish by coating it in a simple marinade before cooking

Ingredients

Ground cumin

2 tsp

Fresh rosemary

1 tbs, finely chopped

Fresh lemon rind

1 tsp, finely grated

Garlic

2 clove(s), crushed

Pepper

½ tsp, (freshly ground)

Olive oil

Instructions

  1. Heat a small frying pan over medium heat. Cook cumin seeds for 1–2 minutes or until fragrant.
  2. Using a mortar and pestle, crush seeds. Combine cumin with rosemary leaves, lemon rind, garlic, pepper and olive oil in a small bowl.
