Cumin and rosemary marinade
Add an amazing new flavour dimension to meat, chicken or fish by coating it in a simple marinade before cooking
1 tbs, finely chopped
Fresh lemon rind
1 tsp, finely grated
2 clove(s), crushed
½ tsp, (freshly ground)
- Heat a small frying pan over medium heat. Cook cumin seeds for 1–2 minutes or until fragrant.
- Using a mortar and pestle, crush seeds. Combine cumin with rosemary leaves, lemon rind, garlic, pepper and olive oil in a small bowl.
