Coriander and chilli scallops

These tasty morsels look fancy and only take 20 minutes to make. Add extra chilli if you like them spicy.

Ingredients

Scallop(s)

24 individual, without roe

Olive oil

1 tbs

Garlic

2 clove(s), crushed

Fresh red chilli

2 whole, deseeded, finely chopped

Lime juice

2 tbs

Fresh coriander

2 tbs, finely chopped

Oil spray

1 x 3 second spray(s)

Lime(s)

2 medium, cut into thin wedges

Instructions

  1. Place scallops in a glass or ceramic dish. Add oil, garlic, chilli, juice and half the coriander. Toss gently to coat. Thread 2 scallops, at a time, onto small cocktail skewers, to make 12 skewers.
  2. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook scallops, turning once for about 30 seconds on each side or until cooked to your liking.
  3. Serve cooked scallops on ceramic Chinese soup spoons with the lime wedges and sprinkle with remaining coriander.

Notes

TIP: Remove scallops from heat and pan shortly before they are cooked through as they continue to cook when standing and can become chewy.
