Chorizo and chickpeas

Luckily for us, this dish is perfect for breakfast, lunch and dinner


Ingredients
Chorizo sausage
2 individual, (340g), chopped
Red onion
1 small, chopped
Red capsicum
1 small, chopped
Canned chickpeas, rinsed and drained
1 400g can, (1 x 400g can)
Vinegar
1 tbs, red wine
Fresh flat-leaf parsley
¼ cup(s), chopped
Instructions

Heat a large non-stick frying pan over medium heat. Add chorizo and cook, stirring, for 5–10 minutes or until crisp and golden. Drain off excess fat and remove from pan.

Add onion and capsicum to pan and cook, stirring, for 5 minutes or until softened. Add chickpeas, vinegar and chorizo and cook, stirring, until heated through. Stir in fresh parsley and serve.
