Grab a spoon and savour the rich chocolate taste of this gooey pudding. Best fresh from the oven

Ingredients

white self-raising flour

¾ cup(s), (105g)

cocoa powder

¼ cup(s), (25g)

brown sugar

150 g, firmly packed

reduced fat oil spread

¼ cup(s), (60g), melted

skim milk

cup(s), (80ml)

egg(s)

1 medium

vanilla bean extract

1 tsp

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 1.25L (5-cup) capacity oval ovenproof dish with oil. Sift flour, half the cocoa powder and ¼ cup of the brown sugar into a medium bowl, then make a well in centre. Whisk melted spread, milk, egg and vanilla extract in a small bowl until well combined. Pour slowly into well, mixing gently to combine.
  2. Spread mixture into prepared baking dish, then sprinkle with remaining cocoa powder and sugar. Carefully pour 1¾ cups (430ml) boiling water over pudding, then bake for 35–40 minutes or until pudding is firm to the touch. Set pudding aside to stand for 5 minutes before serving.

Notes

TIP: Pour the boiling water over the back of a tablespoon to avoid creating holes in the pudding.
