Canned butter beans, rinsed and drained
80 g, melted
1 medium, lightly beaten

- Preheat oven to 160°C. Process beans in a food processor until smooth. Place beans in a large microwave-safe bowl and microwave on Medium (70%) for 1 minute until just warm. Stir in chocolate until combined. Stir in cacao, then syrup, egg and finally flour and a pinch of salt, mixing well after each addition.
- Spoon mixture into a 10cm x 18cm silicone loaf tin and smooth surface with a spatula. Cover with foil and bake for 30 minutes or until set. Stand for 10 minutes before turning out onto a wire rack to cool. Serve warm or cold.
TIPS: Swap butter beans for cannellini beans or add ½ tsp finely grated orange rind in Step 1.
