Anything but ordinary, this hearty salad is a flavour grenade of zesty citrus, earthy chickpeas, spicy chillies and salty feta.

Ingredients

Canned chickpeas, rinsed and drained

1 cup(s), (175g)

Grape tomatoes

½ cup(s), quartered, (80g)

Avocado

¼ medium, finely chopped

Fresh coriander

2 tbs, chopped

Red onion

¼ small, finely chopped

Mixed salad leaves

2 cup(s), (baby leaves), (60g)

Reduced fat feta cheese

30 g, crumbled

Lime rind

¼ tsp, finely grated

Lime juice

2 tsp

Chipotle in adobo sauce

1 tsp

Olive oil

1 tsp

Instructions

  1. To make chipotle-lime sauce, combine all ingredients in a medium bowl. Add chickpeas, tomatoes, avocado, coriander and onion. Season with salt and toss well.
  2. To serve, arrange salad leaves on a serving plate. Top with chickpea mixture and sprinkle with feta.

Notes

INGREDIENT TIP: You can buy chipotle in adobo sauce in a small jar or can. To avoid waste, you can make up a bigger batch of the chipotle-lime sauce and keep in the fridge for up to 3 days. Use it on salads or to roast veggies or chicken.
