A classic dish with a crispy chorizo twist. This warming bowl of pumpkin soup is sure to hit the spot.

Ingredients

Butternut pumpkin

2 kg, peeled, cut into 2cm pieces

Brown onion

2 medium, halved, thinly sliced

Dried oregano

2 tsp

Garlic

2 clove(s), crushed

Chipotle sauce

1 tbs

Orange rind

1 tsp, finely grated

Chicken stock cube

2 individual, gluten-free variety, to make 1.5L (6 cups) hot stock

Chorizo sausage

80 g, roughly chopped

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Line 2 baking trays with baking paper. Spread pumpkin evenly over the prepared trays and lightly spray with oil. Season with salt and pepper. Bake for about 30 minutes or until tender.
  2. Meanwhile, lightly spray a large, deep pot with oil and heat over medium heat. Cook onions, stirring occasionally, for 6-8 minutes or until light golden. Add oregano, garlic, chipotle sauce and orange rind, cook, stirring, for 2 minutes. Stir in roasted pumpkin and stock and bring to the boil. Gently boil for 1 minute. Remove from heat. Blend to a smooth purée with a stick blender, then season with salt and pepper.
  3. Stir half the chorizo in a small non-stick frying pan over a medium-high heat for about 2 minutes or until crisp and lightly browned, then drain on a paper towel-lined plate. Divide half of the soup among 4 bowls and scatter over the chorizo.

Notes

Tip: If you don’t own a stick blender, use a food processor or blender to purée the soup in batches, then return to pot and reheat before serving. To serve: Ladle half the soup into 4 serving bowls. Stir through 1 tablespoon of 99% fat-free plain yoghurt (contains dairy) in each bowl to create a creamy texture. To freeze: Cool the remaining soup (without chorizo), then transfer to a reusable container and freeze for up to 3 months. Defrost, then reheat in a saucepan over low heat on the stovetop, or in a microwave-safe dish in the microwave, until thoroughly heated. Continue from step 3 to finish.
