Chilli chicken, chickpea and rocket salad
Cooked skinless chicken breast
140 g, chopped
Canned chickpeas, rinsed and drained
1 125g can
1 individual, thinly sliced
½ medium, finely chopped
25 g, baby, leaves
- Place chicken, chickpeas, shallot, capsicum and rocket in a bowl and toss to combine.
- To make dressing, whisk lime juice, sambal oelek, oil, paprika and 1 teaspoon hot water in a small bowl.
- Add dressing to salad and season with salt and pepper. Toss to combine.
