Chilli chicken, chickpea and rocket salad

Ingredients

Skinless chicken breast, grilled or barbecued

140 g, diced

chickpeas, canned, rinsed, drained

75 g, (1 x 125g can)

green shallot(s)

1 individual, thinly sliced

red capsicum

½ medium, finely chopped

rocket

25 g, baby

lime juice

2 tsp

sambal oelek

1 tsp

olive oil

1 tsp

ground paprika

¼ tsp

Instructions

  1. Place the chicken, chickpeas, shallot, capsicum and rocket in a bowl and toss to combine.
  2. Combine the lime, sambal oelek, oil and paprika in a small bowl with 1 teaspoon of hot water. Add the dressing to the salad and season with salt and freshly ground black pepper. Toss to combine.

Notes

TIP: Sambal oelek: This fiery condiment, made from crushed red chillies, lemon juice and salt, is an Indonesian staple. It's available from the Asian section of the supermarket. If you want to turn down the heat, swap it for a finely chopped and deseeded long red chilli.
