Cherry and white chocolate cheesecake trifles
Get ready to dig your spoon into this one! Layers of low-fat cheesecake and sweetened cherries, topped with toasted coconut and white chocolate. Using 97% fat-free cottage cheese is a genius way to enjoy cheesecake without using up too much of your Daily Budget.
97% fat-free cottage cheese
2 cup(s), (500g)
Vanilla bean paste
Morello cherries in syrup, drained and pitted
Shredded or desiccated coconut
2 tsp, (shredded)
10 g, finely grated
- Process cottage cheese, vanilla paste and 3 teaspoons water in a food processor until creamy. Spoon half the cottage cheese mixture into 4 serving glasses, top with half the cherries. Repeat layers with remaining cottage cheese and cherries. Cover and refrigerate until ready to serve.
- Stir coconut in a small frying pan over medium heat until light golden. Remove from heat and cool. Sprinkle coconut and white chocolate over cherries to serve.
