Such a simple salad yet full of flavour and only 6 ingredients.

Ingredients

Dry orecchiette pasta

200 g

Cherry tomatoes

400 g, mixed variety, chopped

Red onion

1 small, finely chopped

Bocconcini

100 g, chopped

Fresh basil

½ cup(s), small leaves, plus extra to garnish

Fat-free dressing

2 tbs, balsamic variety

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Refresh under cold water and drain. Transfer to a large bowl.
  2. Add tomatoes, onion, bocconcini, basil and dressing to pasta and toss to combine. Set aside for 10–15 minutes before serving.

Notes

TIP: You can use any small tomato variety instead of mixed tomatoes and any type of pasta. Setting the salad aside for 10–15 minutes allows the pasta to absorb flavours from the tomatoes, basil and dressing.
