Caprese pasta salad

Such a simple salad yet full of flavour and only 6 ingredients.


Ingredients
Dry orecchiette pasta
200 g
Cherry tomatoes
400 g, mixed variety, chopped
Red onion
1 small, finely chopped
Bocconcini
100 g, chopped
Fresh basil
½ cup(s), small leaves, plus extra to garnish
Fat-free dressing
2 tbs, balsamic variety
Instructions

Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Refresh under cold water and drain. Transfer to a large bowl.

Add tomatoes, onion, bocconcini, basil and dressing to pasta and toss to combine. Set aside for 10–15 minutes before serving.
