Beef pita pockets
Wholemeal pita pocket
2 medium, (2 x 43g)
50 g, trimmed
½ small, thinly sliced
5 individual, quartered
Beef fillet (tenderloin), cooked without added fat
¼ cup(s), with lemon juice, or leftover chimichurri sauce
- Cut pita pockets in half crossways and carefully separate layers to open out. Spread 1 tablespoon of hummus into each pocket half.
- Toss snow pea sprouts, onion, tomatoes, beef and chimichurri together in a medium bowl. Season with salt and pepper. Divide evenly between pita pockets and serve immediately.
