These pretty picnic parcels are great for outdoor catch-ups with friends.

Ingredients

Vitastic Pocket Pita, Lite, Wholemeal

84 g, (2 x 42g)

Dip, hommus

cup(s)

snowpea sprouts

50 g, trimmed

red onion

½ small, thinly sliced

cherry tomato

5 individual, quartered

cooked trimmed beef fillet

100 g

fresh herbs

¼ cup(s), with lemon juice, or leftover chimichurri sauce

lemon juice

Instructions

  1. Cut pita pockets in half crossways and carefully separate layers to open out. Spread 1 tablespoon of hummus into each pocket half.
  2. Toss snow pea sprouts, onion, tomatoes, beef and chimichurri together in a medium bowl. Season with salt and pepper. Divide evenly between pita pockets and serve immediately.

Notes

TIP: If you don’t have leftover chimichurri, add some chopped parsley or basil and a squeeze of lemon juice.
