These aromatic baked apples are a cheap and easy dinner party dessert. Enjoy any leftovers on your morning muesli!

Ingredients

Red apple, unpeeled

4 medium

No added sugar orange juice

1 cup(s), (250ml)

Brown sugar

2 tbs

Ground nutmeg

tsp, (pinch)

Pistachios

24 g, coarsely chopped, (2 tbs)

Ground cinnamon

½ tsp

99% fat-free, plain or natural yoghurt, unsweetened

400 g, to serve

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Cut each apple horizontally into three thick slices. Place slices, in a single layer, over the base of a large, shallow, ovenproof dish.
  2. Combine juice, sugar and nutmeg in a medium jug and pour over apple slices. Bake, basting with juices every 5 minutes, for 20 minutes or until tender.
  3. Transfer apples and syrup to a serving dish. Sprinkle with nuts and dust with cinnamon. Serve with yogurt.

Notes

The apples in this dessert have not been peeled or cored. Leave the skin on for the extra fibre it provides but core them if you wish.
