Recipe from Anna's cookbook, '50% weight loss, 100% healthier'. In these cute little bites, the juicy apple and sweet cinnamon pairs with the crisp crunch of the wonton base for a deliciously light way to end a meal.

Ingredients

Apple(s)

2 medium, (300g) pink lady variety, peeled, diced

Vanilla bean extract

1 tsp

Ground cinnamon

1 tsp, plus extra to serve

Wonton wrapper(s)

12 individual, (12 x 6g wrappers)

Egg(s)

1 medium, lightly beaten

Cinnamon sugar

1 tsp

99% fat-free, plain or natural yoghurt, unsweetened

½ cup(s), (120g)

Fresh mint

1 tbs, to serve

Instructions

  1. Place apple, vanilla and cinnamon in a saucepan and cook, stirring occasionally, over a medium heat for 15–20 minutes or until tender. Set aside to cool slightly.
  2. Meanwhile, preheat oven to 180°C. Brush wonton wrappers with beaten egg and sprinkle with a little cinnamon sugar. Place wrappers, cinnamon side up, in a 12hole (1½ tablespoon capacity) mini-muffin silicone mould.
  3. Bake tart cases for 10–15 minutes or until golden and crisp. Cool slightly. Spoon warm apple mixture into cases and serve topped with a dollop of yoghurt and sprinkled with extra cinnamon and mint leaves.
