White self-raising flour
250 g
CSR Sugar, Raw, Reduced Calorie
50 g
Ground cinnamon
½ tsp
Egg(s)
2 medium
Canola oil
50 ml
Orange(s)
1 small, (squeezed to make 3 tbs juice)
Orange rind
1 tbs
Unsweetened almond milk
¼ cup(s), vanilla flavoured (60ml)
Apple, pink lady, unpeeled, fresh
2 large, grated
Fresh dates
12 individual, pitted and chopped
Raisins
⅓ cup(s), (50g)
Currants
⅓ cup(s), (50g)
Mixed spice
¼ tsp
Ground cinnamon
½ tsp
Sugar-free maple syrup
2 tbs
Orange zest
2 tsp, finely grated
Orange(s)
1 medium, (squeezed to make ¼ cup juice)

Preheat oven to 170℃. Lightly spray a 20cm (base measurement) round springform tin with oil. Line base and side with baking paper.

To make the fruit mince, combine all fruit mince ingredients with ½ cup (125ml) water in a saucepan and cook over low heat for 15 minutes or liquid has evaporated and dried fruit is plump. You’ll need 240g mixture for this recipe. Set the rest aside to cool completely before storing in a sterilised jar.

Combine flour, sugar, cinnamon and ½ teaspoon salt in large mixing bowl. Combine eggs, oil, almond milk, and orange juice and rind in a separate medium mixing bowl. Gradually fold through the wet ingredients into the dry ingredients, until just combined.

Spoon mixture into prepared tin and smooth surface with back of a spoon. Bake for 35 minutes, or until a skewer inserted into the centre comes out clean. Set cake aside in tin on a wire rack to cool completely before turning it out onto a plate. Cut into 13 slices and serve.
