Pan-fry 50g button mushrooms (sliced) with 1 tbs water until golden. Add 1 cup baby spinach leaves and cook until just wilted. Stir in ½ tsp sesame seeds (toasted). Place mushroom mixture into a ⅔-cup (160ml) capacity ramekin. Carefully break 1 egg on top. Microwave on medium for 2 minutes until egg is cooked to your liking. Sprinkle with ½ tsp sesame seeds (toasted) and 1 green shallot (thinly sliced). Serve with 1 x 35g slice wholegrain bread (toasted).
