Pork on fresh creamed corn with avocado & chilli salsa
Pork medallion or loin steak, raw
fresh red chilli
Corn, cooked without added fat
1 cob(s), cob, boiled
Heat 1 tsp olive oil in a frying pan. Cook 100g lean pork medallion until cooked to your liking. Combine ¼ tomato (finely chopped), ¼ red capsicum (finely chopped), ¼ avocado (finely chopped), 1 tbs fresh coriander (chopped), 1 tsp lime juice and a pinch of finely chopped long fresh red chilli. Process kernels from 1 boiled corn cob in a food processor. Top creamed corn with pork and serve with salsa.
