canned chickpeas, rinsed and drained

zucchini

lemon juice

Notes

Combine rice, shallots, sweet potato, chickpeas and zucchini in a bowl. Stir through seasoning, stock, lemon juice and coriander. Toss well to combine. Taste and season with salt and pepper. Finish lunch with the yoghurt.
