Heat a non-stick frying pan over medium heat. Spray with oil. Add onion, thyme and garlic and cook, stirring for 2 minutes. Add pumpkin and cook until golden and tender, then remove from the heat. Re-heat pan and add chicken. Cook until golden and cooked through. Return pumpkin to pan and add spinach and milk. Bring to the boil and simmer for 2 minutes to heat through.You may need to add 1 tbs water if sauce is too thick. Season to taste with salt and pepper and serve over pasta.
