Skinless chicken breast

150 g, (1x150g fillet)

Reduced fat oil spread

2 tsp


½ clove(s), crushed

Fresh flat-leaf parsley

1 tsp, chopped

fresh chives

1 tsp, chopped

plain flour

1 tbs

egg white

1 medium, whisked

panko breadcrumbs

25 g

fresh green peas

¼ cup(s), steamed


½ medium, sliced, steamed

Oil spray

1 x 3 second spray(s)


Cut a pocket in the side of chicken. Combine spread, garlic, parsley and chives. Place mixture into chicken pocket. Coat chicken in flour and dip in egg white. Coat in breadcrumbs and place on a baking tray. Lightly spray chicken with oil and bake in oven preheated to 180°C or 160°C fan-forced for 20 minutes or until cooked through. Serve with peas and zucchini.
