This batched mocktail, modeled after minty mojitos, is a cold, fizzy, refreshing sipper. Just like the classic, this faux-jito begins by muddling together fresh mint, lime chunks, and sugar until the limes release their juices and the mint’s herbal flavour permeates the liquid. The gritty, abrasive nature of the sugar helps the process.

Fresh mint leaves

4 wedge(s), cut into wedges

Sugar

⅓ cup(s)

Unsweetened flavoured seltzer

6 cup(s), lime variety, chilled

Fresh mint leaves

6 sprig(s), for garnish (optional)

In a large pitcher or 8-cup spouted measuring cup, place the mint and lime wedges. Sprinkle the sugar over the top. Muddle the mixture well with a muddler or wooden spoon until you extract as much juice as possible from the lime wedges. Stir in the seltzer. Using a slotted spoon, scoop out the lime pieces. Pour the mixture into ice-filled glasses. Garnish with mint sprigs, if desired.
