Coffee-Cardamom Date Balls

For a hit of sweet flavour and little extra energy, try these chewy little treats. This will work with any variety of dates, as long as they still have a bit of moisture to them. Otherwise, they’ll be difficult to chop in the food processor. Toasted oats help to bind the dates together and rolling the balls in almond flour helps to reduce their stickiness.


Ingredients
Uncooked old fashioned oats
½ cup(s)
Fresh dates
8 oz, pitted
Instant espresso powder
1¼ tsp(s)
Ground cardamom
¼ tsp(s)
Almond flour
3 tsp(s)
Instructions

In a small skillet, cook oats over medium heat, stirring often, until lightly toasted, about 3 minutes. Transfer to a food processor.

Add all remaining ingredients. Pulse until dates and oats are finely chopped and mixture forms large clumps.

Scoop out 1 tbsp mixture and roll into a ball. Repeat for total of 16 balls.

Roll in almond flour to lightly coat.
