If you're looking for a high-energy, healthy snack, while you're on-the-go, look no further than these tasty, fibre-packed balls of bliss. Pop them into a snack bag, place them into your lunch, snack on them in the car, at home, or while running errands. The dates and apricots provide satiating fibre effects while the cocoa and coconut provide you with an indulgent sensation.

Ingredients

Raw cashews

3 oz, (75 grams)

Dried apricot halves

75 gm, chopped

Dried dates

50 gm, pitted and chopped

Sugar

1¼ tsp(s), or artificial sweetener

Unsalted creamy peanut butter

1 tbsp(s), heaping

Unsweetened cocoa powder

2 tsp(s), leveled

Shredded coconut meat unsweetened

2 tbsp(s)

Instructions

  1. Place the cashews, apricots, and dates in a food processor and blitz until you have a coarse paste. Transfer to a bowl and stir in the sugar and peanut butter until the mixture is fairly stiff. Roll the mixture out and shape into 14 equal balls.
  2. Place the cacao and shredded coconut onto two separate small plates. Roll half the balls in cacao and half in coconut. Store in an airtight container in the fridge.
  3. Serving size: 1 energy bite
