You won't be able to get enough of these hearty yet sweet oat bars. The best part is that there isn't any special equipment required, not even an electric mixer! You can also have them ready to go in under an hour. Just be sure to let them cool completely in the pan so they have time to set and don't fall apart while you're cutting them into bars. Also, if you prefer, you can make these bars with fresh blueberries or with chopped peeled fresh peaches instead of the cherries. Feel free to experiment with whatever you have on hand. Pack up a square for a delicious on-the-go dessert.

Ingredients

White whole wheat flour

Uncooked old-fashioned rolled oats

½ cup(s), sliced, toasted, chopped

Ground cinnamon

Baking powder

Baking soda

Dark brown sugar

½ cup(s), packed

Egg whites

Almond butter

Cherries

¾ cup(s), pitted and halved fresh, or unsweetened frozen pitted cherries, halved

Instructions

  1. Preheat oven to 350°F. Line 8-inch square baking pan with parchment paper, leaving 2 inches of overhang on all sides.
  2. In large bowl, stir flour, oats, almonds, cinnamon, baking powder, baking soda, and salt. In medium bowl, stir brown sugar, oil, egg whites, almond butter, and vanilla. Add brown sugar mixture and cherries to flour mixture and stir to combine. Transfer batter to prepared pan. Using damp hands, pat into even layer.
  3. Bake until tester inserted into center comes out clean, about 25 minutes. Let cool completely in pan on wire rack. Lift from pan using parchment overhang. Cut lengthwise into 4 strips, then cut each strip crosswise into 4 squares. Store in airtight container at room temperature for 3 days or freeze for up to 3 months.
