Superfood Power Bowl

This high-octane energy bowl incorporates the superfoods powers of kale, sweet potatoes, and turmeric – sure to keep you energized all day long.

Here we recommend ‘massaging’ the kale, a technique that helps to break down some of the kale’s fibres, making it easier to chew and digest. Simply use your hands, rip the kale into small bite-sized pieces. Add a touch of olive oil and lemon juice and using a kneading motion massage the kale with your hands for 3-5 minutes until the kale is tenderized and turns a vibrant green. 

Ingredients

  • 1⁄2 cup uncooked long grain brown rice
  • 1 medium uncooked sweet potato, cut into 1/2 inch cubes
  • 4 tsp olive oil, divided
  • 1⁄2 tsp ground turmeric
  • 1⁄2 cup edamame (shelled), cooked
  • 2 cups chopped raw kale
  • 1 tsp fresh lemon juice
  • 2 large eggs, poached
  • 1 Tbsp vinegar
  • 1 pinch table salt
  • 1 pinch black pepper
  • 1⁄4 tsp crushed red pepper flakes (optional)
  • 1 tsp fresh lemon juice
  • 1 tsp Dijon Mustard
  • 1⁄4 tsp honey
  • 1 tsp water


Instructions

Preheat oven to 350F.

Prepare rice according to package directions.

Toss the sweet potato with 1 tsp olive oil, turmeric, and salt. Arrange on a parchment-lined baking sheet and roast for 15-18 minutes, until soft.

Rinse the kale and dry. Using your hands, rip the kale into small bite-sized pieces and place in a large bowl. Add 1 tsp of olive oil, 1 tsp of lemon juice, and a pinch of salt. Massage the kale with your hands for 3-5 minutes until the kale is tenderized and turns a vibrant green.

In a small bowl, whisk together the remaining olive oil and lemon juice, honey, water, Dijon, and salt and pepper to taste to make the dressing.

To serve, divide rice and kale between two bowls. Top with ¼ cup of edamame and ½ cup of sweet potato each and pour dressing over top. Top with poached egg.
