This salad pairs the sweetness of grapes with tart, creamy goat cheese. When cherries are in season, swap pitted cherries for grapes.
Ingredients
1 1⁄2 Tbsp olive oil
1 1⁄2 Tbsp water
4 tsp honey mustard
1 Tbsp apple cider vinegar
1⁄4 tsp table salt
1⁄8 tsp black pepper, freshly ground
8 cup(s) fresh spinach, baby variety
1 cup(s) grapes, red, seedless, halved
1⁄3 cup(s) uncooked red onion(s), or thinly sliced
1⁄4 cup(s) slivered almonds, toasted
1⁄4 cup(s) semisoft goat cheese
Instructions
To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt and pepper.
Add spinach, grapes and onion to bowl; toss to mix and coat.
Place about 2 1/4 cups salad on each of 4 salad plates; sprinkle each with 1 tablespoon almonds and 1 tablespoon cheese. Yields 1 salad per serving.
Notes
Short on time? Use a bottled, light Dijon vinaigrette dressing instead (could affect PointsPlus value)
