Spinach Salad with Goat Cheese, Grapes and Honey Mustard Dressing

This salad pairs the sweetness of grapes with tart, creamy goat cheese. When cherries are in season, swap pitted cherries for grapes.

Ingredients

  • 1 1⁄2 Tbsp olive oil

  • 1 1⁄2 Tbsp water

  • 4 tsp honey mustard

  • 1 Tbsp apple cider vinegar

  • 1⁄4 tsp table salt

  • 1⁄8 tsp black pepper, freshly ground

  • 8 cup(s) fresh spinach, baby variety

  • 1 cup(s) grapes, red, seedless, halved

  • 1⁄3 cup(s) uncooked red onion(s), or thinly sliced

  • 1⁄4 cup(s) slivered almonds, toasted

  • 1⁄4 cup(s) semisoft goat cheese

Instructions

  1. To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt and pepper.

  2. Add spinach, grapes and onion to bowl; toss to mix and coat.

  3. Place about 2 1/4 cups salad on each of 4 salad plates; sprinkle each with 1 tablespoon almonds and 1 tablespoon cheese. Yields 1 salad per serving.

Notes
