Mini Pulled Turkey Sliders

Who doesn’t love a slider? Mini, but packed full of flavour, it’s the best bits of a bigger sandwich, but made mini – meaning you can mix and match your toppings and make a variety of original combinations. Here we kept it simple, paying homage to a barbeque classic; pulled meat. Instead of opting for the traditional pork butt, we kept it light and substituted it for skinless turkey breast – a zero Points® food. And by making it in a pressure cooker, you will retain the succulent moisture within the meat, and because of the mechanics of a pressure cooker, you won’t need to use heaps of sugary sauce to render the same results – another way to reduce SmartPoints! Here we serve them simply on a slider bun, but feel free to load them up with your favourite zero Points foods toppings like; shredded cabbage, pickles, marinated hot peppers, mustard, grilled onions or crisp lettuce; the combinations are endless!

Ingredients

  • 1 Tbsp apple sauce
  • 1 Tbsp chipotle in adobo
  • ¼ cup BBQ sauce
  • ¾ cup broth
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 small onion, diced
  • 2 ½ lb boneless turkey breast
  • 12 slider buns
  • Rub:
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cover turkey in dry rub. Place into pressure cooker.
  2. Combine apple sauce, chipotle, BBQ sauce, broth, salt, pepper and onion. Add to the pressure cooker. .
  3. Pressure cook for 90 minutes. Strain liquid and pull turkey breast, adding a few spoonfuls of cooking liquid to add moisture as needed. Serve on slider buns.
