Canadian Maple Bacon Salmon

Throwing a Canada Day potluck? Then you are in luck; we have a super simple recipe great for a crowd using some of Canada’s favourite ingredients: salmon and maple. What makes this dish a winner for any get together is its ease of preparation – and the delicious flavours of course!

Simply use the oven-baked method to crisp up some bacon, while your salmon fillet roasts at the same temp and time, with a sweet and savoury maple glaze. Pull them both out, dice up the bacon and garnish, and voila – a celebratory salmon feast! By using highly flavoured ingredients (like bacon and maple) you can actually get away with using less than you think (and save some SmartPoints) without sacrificing any flavour.

Ingredients

  • 4 Bacon strips
  • 2 Tbsp maple  syrup
  • 1 tsp brown sugar
  • 1 Tbsp soy sauce 
  • 1 tsp salt 
  • pinch pepper
  • 2 tsp grainy mustard
  • 1 tsp Lemon juice
  • 2 lbs salmon, fillet
  • 2 Tbsp parsley (chopped) 

Instructions

  1. Place bacon on a parchment-lined baking sheet and place into a cold oven. Preheat the oven to 375F and allow the bacon to cook for 20 minutes
  2. Combine maple syrup, brown sugar, soy sauce, salt, pepper mustard, and lemon juice. Arrange salmon on a baking sheet lined with parchment paper. Brush with sauce and bake at 375F for 20 min.
  3. Remove bacon from the oven, cool slightly, then chop finely.
  4. Remove salmon. Top with chopped bacon and garnish with fresh parsley.
