Ingredients

Calorie controlled cooking spray

Turkey breast, skinless, raw

500 g, cut into small cubes

Tesco Thai Yellow Curry Paste

60 g, 4 tablespoons (use any brand)

Reduced fat coconut milk, tinned (7.7% Fat)

Baby corn

175 g, halved lengthways

Green Beans

100 g, trimmed and cut into 3 pieces

Cherry Tomatoes

150 g, halved

Lime

1 medium, zest and juice

Basil, fresh

15 leaf/leaves, to serve

Instructions

  1. Spray a large lidded non stick saucepan with the cooking spray and cook the turkey pieces and curry paste for 5 minutes until browned all over.
  2. Pour in the coconut milk and simmer, covered, for 10 minutes. Add the baby corn and beans and cook for 5 minutes until they are tender.
  3. Stir in the tomatoes, lime juice and zest. Scatter over the basil leaves and serve in bowls immediately.
