Sumac-roasted winter berries with mascarpone cream
This attractive crimson spice packs a tart, citrussy punch, and perks up this delicious autumnal take on fruit salad
Frozen Mixed Berries
2 teaspoon(s), level, 1 ½ , plus extra to garnish
4 teaspoon(s), level
0% fat natural Greek yogurt
- Preheat the oven to 190°C, fan 170°C, gas mark 5. Place the berries into a medium roasting tin, sprinkle over the sumac and drizzle over 3 tsp honey. Roast in the oven for 25 minutes, until soft and syrupy. Leave to cool in the tin for 10 minutes.
- Meanwhile, whisk together the mascarpone, yogurt and remaining honey until smooth. Divide the roasted berries between 4 bowls and top each with the mascarpone cream. Garnish with the mint leaves and serve.
