Roasted vegetable focaccia

Layering up a classic focaccia with a colourful topping of oven-roasted veggies is the perfect way to add another flavour dimension to your bread without adding any extra Points


Ingredients
Tesco Focaccia Bread Mix
500 g, prepared as instructed
Red onion
1 small, cut into wedges
Red pepper
1 medium, deseeded and cut into thick slices
Yellow pepper
1 medium, deseeded and cut into thick slices
Courgette
1 medium, trimmed and cut into rounds
Olive Oil
2 teaspoon(s)
Cherry Tomatoes
150 g
Basil, fresh
1 tablespoon(s)
Instructions

Preheat the oven to 180°C, fan 160°C, gas mark 4.

Put the onion, peppers and courgette in a roasting tin, drizzle over the olive oil and season well. Roast for 25 minutes until tender. Remove from the oven and set aside to cool.

Make the bread to pack instructions, using 2 tsp olive oil to make the dough, but ignoring instructions for the topping. Bake the bread for the specified time.

Around 5 minutes before the end of the bake time, layer the roasted vegetables and tomatoes across the top of the focaccia and return to the oven.

Garnish with the basil leaves and cut into thick slices to serve.
