Ploughman's salad

We love how easy it is to throw together a ploughman’s using leftovers from the fridge. This twist on the classic uses salad as a base but is still packed with flavour.


Ingredients
Apple
½ medium, pink lady
Lemon Juice, Fresh
1 tablespoon(s)
Olive Oil
1 teaspoon(s), extra virgin
Smooth Mustard
½ teaspoon(s), level, English
Pickled onions (no added sugar), drained
20 g, silverskin, halved
Celery, Raw
½ stick(s), sliced, leaves reserved
Half fat Cheddar cheese
30 g, crumbled
Spinach
20 g, handful, young leaf
Prepacked ham
20 g, hickory smoked ham, shredded
Wholemeal bread, sliced
1 slice(s), medium, toasted and torn
Sweet Pickle
2 teaspoon(s), heaped, We used Branstons
Instructions

Toss the apple with half the lemon juice in a bowl. Mix the remaining juice with the oil and mustard. Season.

Add the onions, celery and leaves, cheese, spinach, ham and croutons to the bowl, drizzle over the dressing and toss to dress. Serve with the pickle.
