This sweet and tangy chutney will do wonders for your grilled chicken breast or pork. Fresh coriander gives it just the right amount of 'bite.'

Ingredients

Calorie controlled cooking spray

5 spray(s)

Root Ginger

1 teaspoon(s)

Chilli, green or red

1 individual, cored, seeded and finely chopped

Shallots

1 medium, large, finely chopped

Peach

2 medium, ripe, chopped

Sweetcorn, tinned, drained

175 g, canned or frozen (thawing not necessary)

Vinegar, All Types

1 tablespoon(s), balsamic

Fresh Vegetable Stock

1 tablespoon(s), level, vegetable

Salt

teaspoon(s), or to taste

Coriander, fresh

2 teaspoon(s), finely chopped

Instructions

  1. Coat a heavy-bottomed pot with cooking spray. Add ginger, chilli and shallots. Saute over a medium-high heat until tender, about 2 minutes.
  2. Add peaches and sweetcorn; add vinegar, stock and salt. Cover pot with tight-fitting lid. Reduce heat to low and simmer until peaches are tender and slightly pulpy, about 10 minutes. Sprinkle with coriander.

Notes

You can skin the peaches if you like. Dip peaches in boiling water for 1 minute and then remove skins with a knife, then chop.
