Ingredients
Beef sirloin steak, lean, raw
4 steak(s), medium, each weighing about 225g
Olive Oil
1 teaspoon(s)
Vinegar, All Types
2 tablespoon(s), (red wine)
Lemon Juice, Fresh
2 teaspoon(s)
Dijon Mustard
1 teaspoon(s), heaped
Chilli, green or red
1 individual, deseeded and finely sliced
Onion
1 medium, thinly sliced
Parsley, Dried
1 teaspoon(s), level
Chives, Fresh
1 teaspoon(s)
Salt
1 teaspoon(s)
Black pepper
1 teaspoon(s)
Salad leaves
1 portion(s)
Tomato
1 large, to serve
Instructions

Put the steaks into a large shallow dish or on a plastic tray (not a metal one). Mix together the olive oil, vinegar, lemon juice, mustard, chilli, red onion, parsley and chives. Season with salt and pepper, then add to the steaks, turning them to coat. Cover and leave to marinate for at least 30 minutes, or overnight.

When ready to cook, preheat the barbecue or a char-grill pan. Cook the steaks for 3-4 minutes per side, or according to your liking. Allow them to rest for a few minutes before serving (they will be juicier if you do).

Serve with a mixed leaf salad and tomatoes.
