We’ve taken the delicious flavours of lasagne, swapped the beef for chicken sausage to make a quick one-pot soup thats on the table in 30 minutes.


Ingredients
Calorie controlled cooking spray
8 spray(s)
Chicken sausage, grilled
400 g, thinly sliced
Onion
1 medium, chopped
Garlic
3 clove(s), finely chopped
Tomato Purèe
1 tablespoon(s), level
Passata
500 g, garlic and herb
Chicken stock cube(s)
2 cube(s), 1 litre stock
Lasagne sheets, dry
7 sheet(s), into pieces
Parmesan Cheese
30 g, grated
Instructions

Mist a saucepan with cooking spray and heat over a medium heat. Add the sausages and cook for 2-4 minutes, until browned. Remove the sausages from the pan and set aside.

Mist the pan with more cooking spray and add the onion, cook for 5 minutes. Then add the garlic and cook for a further 2 minutes. Add in the tomato purée and cook for 1 minute.

Return the sausages to the pan and add the passata and stock. Bring the pot to the boil, add the lasagne sheets, and reduce the heat to a simmer. Cook for 5 minutes until the pasta is tender.

Season to taste, then ladle the soup into bowls and sprinkle each bowl with the Parmesan.
